Big Trees and Pumpkin Carving

This weekend I went to Columbia to visit Nathan and we had such a wonderful time! I wanted to share a snippet of what our Saturday looked like with y'all because it was so wonderful.

About 20 minutes outside of Columbia is the largest tree in Missouri. It's right off the Katy (bike) Trail which stretches for 237 miles across Missouri. Most of the trail follows Lewis and Clark's path along the Missouri River which has large bluffs with tons of amazing scenery. We wanted to get out of the house and so we decided to go out to the Big Tree which is what everyone calls it. We then headed out to the Eagle Bluffs Conservation Area and looked at the waterfowl refuge lands and Missouri River. Neither of us had been able to get right down near the river before so it was such a great experience. Nathan absolutely loves being outside and near the water and I love watching him take it all in. It makes me happy to see him so in love with the outdoors, it makes me fall in love with him even more.






After we got back from our trip to the conservation area we came back to the house and carved pumpkins!! Carving pumpkins is one of my favorite things to do in the fall season and I love roasting the pumpkin seeds. They turned out really good by the way- I roast them in salted butter with salt on top and they turn out amazing every time. I carved a design that I found in one of those carving idea books but Nathan decided to print out a design from Skyrim. I think they turned out very well!
